The white button only lets me use white text. How do you change the color of the middle button or how do you set the color of your text?
That is the "set to default" color. It is the chat zone color, so /say will be white, and /yell will be red and etc.

I'm still seeing colored text with this mod installed/enabled. Are there any dependencies needed for it?
No, you should see the defaults colors, I didn't remove that, the custom colors like rainbow chatting and the sort should no longer be there.
